Strawberry Protein Yogurt Parfaits

Looking for a snack, side dish, breakfast, dessert but don’t want to compromise on nutrition? Try this kid-friendly strawberry protein yogurt parfaits. I made the yogurt mixture ahead of time, and kept it in the fridge overnight. I topped with fresh diced strawberries and graham crackers right before serving. It was such a hit and I will definitely be making it again, and trying out some other fruit combinations.

Strawberry protein yogurt parfaits

INGREDIENTS:

  • 1 cup plain Greek or Icelandic yogurt

  • 1 scoop strawberry protein powder (I used Nurished strawberry Mighty Milk powder; this is optional)

  • 1 tablespoon strawberry jam

  • 2 large strawberries, diced

  • 4 graham crackers, 2 crumbed, 2 served whole

DIRECTIONS:

  1. In a bowl mix 1/2 cup of the yogurt with 1 scoop of protein powder (optional) . In another bowl, mix the other 1/2 cup yogurt with 1/2 tablespoon of the strawberry jam.

  2. In two small jars, begin layering. Add the remaining jam and place in the bottom of each jar. Next add the protein (or plain) yogurt, then add the strawberry jam yogurt. Top with diced strawberries and crumbled graham cracker, saving one cracker to be served whole, on top.

  3. Dig in and enjoy!



Note: using a high protein yogurt helps make this dish high protein, even without added protein powders.
